
Quick Homemade Cheese from Milk Without Special Enzymes
Description
It works both for holidays and for everyday meals. Homemade cheese is much healthier than store-bought, because you'll know exactly what ingredients it's made from. The main ingredients for this kind of cheese are vinegar and milk. Use milk of any fat content. This product won't contain preservatives or thickeners, but its shelf life will also be much shorter than that of store-bought cheese.

Prepare the listed ingredients. You can use any type of milk and any fat content. Use 6% vinegar.

Pour the milk into a saucepan or pot, bring it to a boil, and turn off the heat. Pour the vinegar into the hot milk and leave it undisturbed for 2–3 minutes. Then gently stir the milk with the vinegar, using slow movements. Thanks to the acid, the milk will separate into curds and whey.

Line the sieve or colander with a double layer of cheesecloth or cotton fabric and pour the contents of the container through it into another deep container. The cottage cheese will remain in the sieve.

Lightly press the cottage cheese and transfer it to a saucepan. Add the salt and baking soda, and add the butter. The baking soda will help slightly melt the cottage cheese so the cheese becomes more pliable. But don't add too much of it, otherwise the cheese will taste bitter.

Rinse the dill and chop it, add it to the container. Place the container on the stove, turn on the minimum heat, and stir.

Heat everything on the stovetop for about 3–5 minutes, until the mixture is smooth and the butter has melted. Turn off the heat.

Transfer the entire mixture to a container or cheese mold. There is no need to grease it; the cheese will turn out rich and moist. Place the container in the refrigerator for at least 1 hour to chill, or better yet, overnight.

After cooling, remove the cheese from the container and cut it into serving slices. Serve with sun-dried tomatoes, fresh cucumbers, lavash, or sliced bread.
