Quick puff pastries with coconut curd in a sandwich maker

Description

Tasty baked goods for the whole family. If you have a sandwich maker, your imagination will always find an outlet! Besides crunchy sandwiches with various fillings, you can bake delicious pastries for breakfast in it in just a few minutes! Prepare the filling in the evening, don’t forget to take the dough out of the freezer, and enjoy tasty baked goods in the morning. Serve it cooled or slightly warm.

    For the filling, mash firm cottage cheese with sugar and sour cream. Add the yolk and fine coconut flakes. If they are too large for you, grind them in a coffee grinder, but not into a powder. Add them to the cheese and mix well, then place in the refrigerator for half an hour to let the coconut flakes swell. Or leave in the refrigerator overnight. If the cottage cheese is too wet, press it in cheesecloth under a weight and add one tablespoon of semolina.

    Defrost the dough, roll it out a bit so that the thickness is no more than 1 centimeter. Cut it into squares to fit the size of your sandwich press’s plate. Spread the filling on half of the squares and cover with the other half. You can brush the edges of the dough with egg yolk, but simply sealing them well is also sufficient.

    Place the resulting pastries in the sandwich maker, close it, and bake for 3–4 minutes until the layers are evenly golden‑brown.

    Serve immediately – hot and crispy, dusted with powdered sugar. With a cup of aromatic coffee – marvelous!
