Description
The recipe won't take much time. It's a simple and affordable option for delicious homemade pastries. These wonderful little buns turn out light and melt-in-your-mouth, thanks to the flaky pastry effect. You can use any filling you like—just make sure it's thick enough and not too juicy. I used mashed potatoes, but you can also use mushrooms, sausage, fish, rice, eggs, chicken, etc. The enriched yeast dough is very easy to prepare, pliable, and a pleasure to work with. Prepare all the ingredients.

Prepare the filling. Peel the potatoes, cut into pieces, cover with water and boil until cooked.

Cut the onion into cubes and fry in vegetable oil until golden brown.

Drain the cooking liquid from the cooked potatoes and mash until smooth.

Add the fried onion and salt to taste. You can add a little hot milk, cream, or broth. Mix well. The filling is ready.

In a deep bowl, combine warm milk, melted warm butter, sugar, and yeast. Stir and let stand for 10–15 minutes.

When the yeast becomes frothy, add the salt and gradually incorporate the flour in parts.

The amount of flour may be slightly more or less than indicated in the recipe. The finished dough should be soft and elastic, and not stick to your hands. Since the dough is quite rich due to the butter, this creates a flaky pastry effect.

Divide the dough into 3 parts.

Roll out each piece into a rectangle. Place the filling on the edge from the wider side.

Roll the dough with the filling into a roll and pinch the seam closed.

Then proceed as follows: press the roll with the edge of your palm and use a sawing motion to cut 4-5 centimeter pieces of the filled dough. This creates small buns. The cutting action helps the edges seal together. You can slightly press the ends for a neater appearance.

Place the buns in a baking pan, brush with egg yolk (optional), and put into a preheated oven at 170-175 degrees. After 20-25 minutes, the quick buns will be ready.
