
Quick Buns with Kefir
Description
The recipe won't take much time. Grandmother often had to improvise to feed a large family, and there was very little time for cooking. You can use any filling. Potato filling makes the buns very filling and delicious; it can be prepared quickly—just boil the potatoes and mash them. Knead the dough using kefir, baking soda, eggs, and flour, roll out the buns, and place the mashed potato filling inside. Bake the buns in the oven.

First, prepare the filling. Peel the potatoes.

Cut into small pieces so that it cooks faster.

Pour water into a high-sided frying pan, add the potatoes, salt, and cook until done.

Drain the water. Mash with a masher until smooth puree forms. Add butter and ground black pepper to taste. Set aside to cool.

Pour kefir into a bowl, add baking soda, and mix. Once the reaction occurs and the kefir stops foaming, add salt, sugar, eggs, and vegetable oil. Beat well, preferably with a mixer. Gradually add flour while stirring. The dough should turn out soft, smooth, without lumps, and not stick to hands.

Divide the dough into small balls. Roll out each ball into a flatbread, place the potato filling in the center, and wrap the dough around it. Press the edges of the buns with a fork. Beat an egg with a fork and brush the tops of the buns with it.

Preheat the oven to 180 degrees. Place the buns on a greased baking sheet or one lined with parchment paper, and put it in the oven. Bake for 20 minutes.
