Quick Pear Jam
Description
A simple preservation recipe. Here are the steps for making quick pear jam: 1. Prepare the fruit. First, wash the pears in cold running water. Soft pear varieties work best, as they are ideal for jam. 2. Peel the fruit with a knife and remove the cores. For convenience, cut the pears in half lengthwise first, then into quarters. 3. Cook the pears until soft. Place them in a pot of boiling water and simmer for 5–7 minutes. 4. Drain the fruit in a colander and use the cooking water as the base for the syrup. 5. Add vanilla, citric acid, and sugar to the water. Stir and bring to a boil. 6. Lower the pears into the syrup and cook until done. How to tell when the jam is ready: take a drop of syrup. If it slides slowly down a tilted surface, the jam is ready. Serve at the table or store in the pantry.
