
Quick Marinated Mushrooms

Prepare all the ingredients.

Wash the mushrooms and pat them dry. If the mushrooms are not too dirty, you can simply wipe them with a damp cloth. Large mushrooms can be cut in half; small ones can be left whole.

Peel the garlic and slice into thin rounds.

Pour water, vinegar, and vegetable oil into a small saucepan. Add mustard seeds, salt, sugar, peppercorns, and a bay leaf.

Bring to a boil and simmer until the salt and sugar have dissolved.

Place the mushrooms in a pot. Cover with a lid.

Bring to a boil and simmer for 5 minutes. During this time, the mushrooms will release their juice, settle, and shrink in size.

Transfer the mushrooms to a storage container. I use a bowl with a lid; you can also transfer them to a glass jar. Refrigerate for at least 1 hour so the mushrooms can marinate.
