
Quick Herring
Description
It works for both holidays and everyday meals. All too often you can buy poor-quality herring—thawed and refrozen, oversalted, or with an off smell. I salt herring myself to avoid such annoying pitfalls. I know exactly how and in what I salt it, and I’m confident in the result. I have several curing recipes, but my favorite is quick herring in brine with whey. Today I’ll share the recipe. It can be served warm or chilled.

Wash the fish, clean it, and remove the head.

Carefully separate the fillet and remove all bones.

Peel the onion and slice it into rings. Rinse the dill and pat dry with a towel.

Put all the spices and salt, a few onion rings, and a sprig of dill into a dry jar, then place the herring fillets on top. Layer everything in the jar, pressing lightly so the layers fit tightly together. Pour a mixture of water and whey over the jar contents. Place under a weight and refrigerate for 24 hours.
