
Quick Spicy Pickled Cabbage
Description
A homemade winter preserve. This recipe is perfect for lovers of spicy dishes, and depending on your taste preferences, you can always adjust how fiery it is yourself by adding more or less of the ingredients that give the cabbage its heat (namely hot pod peppers and garlic). Serve at the table or store in the pantry.

Remove the outer leaves from the cabbage, rinse, pat dry with a towel, and finely shred.

Peel and grate the carrots on a coarse grater.

Take half of the garlic, finely chop it or pass it through a garlic press. Use the remaining garlic whole. Finely chop the hot pepper as well.

Using a wide container, layer all the vegetables, alternating carrots, minced garlic, and cabbage. As you fill the container, distribute the hot peppers and whole garlic cloves.

To prepare the marinade, bring the water to a boil, add the salt and sugar, and cook until they are fully dissolved. Add the vegetable oil and vinegar. Let the marinade cool.

Pour the marinade, cooled to room temperature, over the cabbage. Cover the container with a plate or a cutting board and place a weight on top.

After two hours, remove the weight, mix the vegetables, pack into dry, sterilized jars, and refrigerate. In just 6–8 hours, quick spicy pickled cabbage will be ready!
