
Buuz (classic recipe)
Description
The recipe won't take much time. I suggest making buuz and treating your loved ones to this wonderful dish. The dish is juicy, aromatic, and extremely delicious! Traditionally, the filling is made from horse, lamb, or beef meat. Nowadays, you can also find versions made with pork. Various types of minced meat can be used—choose the one you prefer. Besides meat, you can add onion and garlic to the filling; other vegetables are excluded, and this is the key difference between buuz and similar dishes. Serve hot.

Prepare all the ingredients.

In a deep bowl, combine the egg, salt, water, and vegetable oil.

Add the flour in parts. I'm using whole grain flour (coarse grind), but you can confidently use regular refined white flour to make buuz.

The amount of flour may be slightly more or less than specified in the recipe; the finished dough should be firm yet elastic. Gather it into a ball, cover with a towel, and let it rest.

Meanwhile, prepare the filling. Finely chop the onion into small cubes. Finely chop the beef with a knife or pass it through a meat grinder.

Add salt, pepper, or any other spices, pour in about 50 ml of cold water for juiciness, and mix everything thoroughly until uniform.

Cut off a piece of dough and roll it into a sausage shape. Cut the sausage into pieces about 2.5 - 3 cm wide.

Roll each piece in flour on both sides, pressing with your hands and rolling into a circle. Some may find it more convenient to roll out the entire dough sheet and then cut out circles. Place the meat filling in the center of the rolled-out circle.

Make pinches around the edge of the dough, gathering it into folds. There should be a small hole in the center. It is believed that the more pinches (ideally 33), the more skillful the hostess.

Place the ready buuz on the oiled tiers of a steamer. They need to be cooked by steaming. It is believed that 20 minutes is enough, but I cooked them for 45 minutes.

Buuz are traditionally eaten by hand, biting into them from the bottom and drinking the broth that forms inside. They can be sprinkled with fresh herbs, drizzled with melted butter, or served with any sauce of your choice.
