Description

The pastry is easy and quick to prepare. Instead of chocolate glaze, you can simply dust the pastry halves with powdered sugar or dip them in jam and top with ground nuts. This treat is perfect for a festive table or just for tea with friends or family. Kids will love these "Bouche" pastries served with warm milk or cocoa. You can serve the pastries on a shared plate or individually, placing each one in a cupcake paper liner. Serve warm or chilled. Perfect with tea.

    Take two small bowls and separate the egg whites from the yolks.

    Beat the egg yolks with 40 grams of sugar until a thick white mass forms.

    Beat the egg whites, add 20 grams of sugar, and continue beating until you achieve a white, fluffy consistency. The whipped mixture should be glossy.

    Energetically mix the whites and yolks.

    Add the sifted flour to the beaten eggs and mix until smooth.

    Using a piping bag, pipe 20 rounds of dough onto a baking sheet lined with parchment paper, spacing them 5 cm apart.

    Bake the sponge cakes in the oven at 180 degrees for 19-25 minutes until golden brown. Cool the sponge cakes in the oven.

    Whip the cream with powdered sugar. Spread the whipped cream onto 10 sponge cakes.

    Melt the chocolate. Cover the remaining 10 biscuits with melted dark chocolate on top, and once it has set, add white chocolate patterns.

    Assemble the finished pastries and refrigerate them for a couple of hours so the sponge cakes can soak up the cream. The pastries are ready!
