
Burum with Chicken
Description
It works both for a holiday and for everyday meals. Chicken burum is not exactly a simple dish. To start, we’ll cook adjika from peppers, onions, carrots, tomatoes, and garlic. This adjika will come in handy not only for this dish but also as a sauce for other meat dishes. We’ll also prepare a creamy garlic sauce based on matsoni and sour cream. We’ll marinate the chicken in a piquant marinade, then fry it. And we’ll assemble the burum itself: spread lavash with adjika, then lay out fresh tomatoes, onions, and pickled cucumbers, add the fried chicken. Pour everything with the creamy sauce and wrap it in lavash. A wonderful appetizer or a full dish on the table is ready! You can take it with you outdoors, or simply have it as a snack—it’s very tasty. Serve with fresh herbs and sauce.

1. Let's make adjika. Pass all the ingredients for it through a meat grinder.

2. Transfer everything to a large pot. Add the butter and salt.

3. Cook over low heat, stirring constantly, until thickened.

4. For the sauce: drain the liquid from the matsoni. Mix the matsoni with the other sauce ingredients and mix well.

5. Mix all the marinade ingredients.

6. Wash the chicken thighs and pour the prepared marinade over them. Let marinate for at least one hour.

7. Place the thighs on a baking sheet and bake in an oven preheated to 180°C for about 45 minutes.

8. Assemble the burum. Slice the tomatoes and cucumbers into rounds, and the onion into half-rings.
