Burrito with Veal, Rice, and Beans

Description

The appetizer is quick and easy to make. Burrito with a filling of veal with boiled rice and beans, topped with a delicious sauce on an unleavened wheat flatbread… I want to say a few words separately about Mexican cheese. The most popular varieties are cotija, queso, and tacho. While in other countries cheeses are produced in factories, the situation in Mexico is different. The lion’s share goes to home cheese-making operations. Therefore, every family has its own signature recipes for popular varieties. But you won’t find Mexican cheeses on the shelves of our stores, so we use cheese of your choice in this recipe. The same goes for the meat. If you prefer chicken or pork, feel free to make it with that meat. As for the sauce itself, I recommend preparing it according to the recipe—everything fits perfectly here: orange juice, soy sauce, and everything else. The burrito is incredibly delicious and very filling. The ingredient amounts are for 4 servings; I made one. And one serving was enough for two people. Serve the appetizer at the table.

    Prepare the required ingredients. You can buy ready-made burrito tortillas at the store or make the dough yourself in advance and leave it at room temperature for about 30 minutes. Cook the beans in advance until done, or use canned beans without the liquid.

    Cook the rice in salted water, chop the cilantro, and mix it with the rice; set aside for now. Cut the meat into 2 by 3 cm cubes (approximately). Season the meat with salt and pepper and mix.

    Prepare the sauce. In a bowl, mix orange juice, soy sauce, rice vinegar, sherry, and sesame oil. Stir to combine. Take 1 tbsp of the sauce and pour it over the meat.

    Mix the meat with the sauce, then add the flour and starch mixture. Mix until every piece is coated with the mixture.

    Heat vegetable oil in a skillet and fry the meat for 1–2 minutes. Set the meat aside for now.

    Grate the ginger root and garlic on a grater, zest the orange, and chop the chili pepper.

    In a saucepan, heat the vegetable oil, add the chili pepper, garlic, and ginger, stir, and cook for one minute.

    Pour in the remaining sauce, bring to a boil, immediately reduce the heat, and simmer uncovered for 5–7 minutes. The sauce should thicken slightly.

    Now add the meat and orange zest, and cook for a couple more minutes. Remove from the heat.

    I made the flatbread myself. For 4–6 flatbreads you will need 125 g flour, 1/4 cup water, a pinch of salt, and 2 tbsp vegetable oil. Knead the dough. After 30 minutes, cut it into several pieces, dust the table with flour, and roll each flatbread into a thin sheet. Heat a cast-iron skillet and place the flatbread on it. Reduce the heat immediately. Fry one side until golden brown. Flip the flatbread and sprinkle with cheese.

    Next, spread the rice.

    Transfer the flatbread to a board, place the meat on it, and pour sauce over it.

    And finish with mayonnaise and spicy sauce (to taste). Roll into a roll.
