
Sweet Potato Burgers
Description
The dish is prepared without unnecessary complications. 1. Place a steamer over a medium pot of water. Bring to a boil and add sweet potatoes. Steam for 6 to 7 minutes. Set aside. 2. Heat a large skillet over medium heat. Spray with oil. Add onion, garlic, curry powder, and cumin; cover with a lid. Cook, stirring occasionally, until the onion becomes translucent, about 5 minutes. If the onion starts to dry out, add 2 tablespoons of water. Add tomato paste and cook for another 2 minutes. 3. Transfer the mixture to the bowl of a food processor. Add the steamed sweet potatoes and potato starch. Process for about 1 minute. Rinse the tofu. Place a clean kitchen towel or double layer of cheesecloth on a clean work surface. Put the tofu in the center, wrap it up, and squeeze out excess liquid. The tofu should have a crumbly, minced texture. Transfer the tofu, sweet potato mixture, brown rice, green onions, cilantro, salt, and pepper to a mixing bowl. Stir well. Shape the mixture into 4 patties. 4. Heat a skillet over medium heat. Spray with oil. Cook the patties until golden brown, 5 to 6 minutes per side. Flip and cook until golden on the other side, another 5 to 6 minutes. Place the patties on the bottom halves of burger buns, cover with the top halves, and serve. The dish is ready to be served.
