
Spinach borekas
Description
The pastry is quick and easy to prepare. The simplest filling is cheese—add spinach or other greens, as well as some cottage cheese. You'll get a delicious and interesting combination. Serve them warm or cooled. I promise, you won't stop at just one. They can be served with tea or coffee.

Wash the mint and chop it finely. Grate the Parmesan on a medium grater. Mash the cottage cheese with a fork.

Place the frozen spinach in a saucepan, cover with a lid, and heat over low heat for 5 minutes. After that, drain the excess water from the saucepan. Add Parmesan, cottage cheese, mint, 2 eggs, salt and pepper to taste.

Sprinkle the surface with flour and roll out the dough thinly. Cut into squares.

Visually divide the square of dough into 2 parts. Place the filling on one half and cover with the second half. Brush the pastries with egg beaten with 1 tablespoon of egg, and sprinkle with sesame seeds.

Place the borekas on a baking sheet and bake for 15 minutes at 200 degrees.
