Description

Homemade pastries for tea. There are countless recipes for making buns of various shapes and with different fillings, but the classic version is snail-shaped buns with raisin filling. In this recipe, I suggest a small variation – snail buns with custard cream. Optionally, you can add some raisins to the dough or cream to make the pastries even more delicious. Don't forget about cinnamon either—it makes the buns more appetizing and aromatic. Serve them cooled or slightly warm.

    1. Prepare the starter: dilute the starter with room-temperature water and mix well. Add the sifted flour and mix. Cover the mixture with plastic wrap and let it sit for 8 hours at room temperature.

    2. Add room temperature water and mix well. Place the sifted flour, sugar, and salt into a bowl. Make a small indentation and add the egg into it. Beat the egg with a fork and add the starter.

    3. Knead the dough with a mixer, adding the slightly warm melted butter at the end. Once the butter is fully incorporated into the dough, turn the dough out onto a work surface and knead for 5 minutes.

    4. Place the dough in a bowl greased with vegetable oil, cover with plastic wrap, and let stand at room temperature for 3 hours. Prepare the custard cream: rub the egg yolks with sugar until smooth, add cornstarch, and mix until uniform.

    5. Add the boiling milk in several stages, constantly stirring (leave a little milk in the saucepan). Place the saucepan with milk over low heat, slowly pour in the yolk-milk mixture in a thin stream, and bring to a boil, constantly stirring the mixture.

    6. When the cream comes to a boil and thickens, remove the pan from the heat. Add vanilla and mix well. Let the cream cool completely. Place the dough on a work surface, shape into a ball, and divide into 6 parts.

    7. Shape the dough into balls, cover with plastic wrap, and let rest for 10 minutes. Shape the buns—flatten each ball into a thin oval, then spread the cream along one long side. Roll the dough into a log and coil it into a spiral.

    8. Place the buns on a parchment-lined baking sheet, spaced apart from each other. Brush the buns with egg yolk beaten with water and bake in a preheated oven at 180-190 degrees Celsius for 20-25 minutes.
