Description

“Stolichnye” buns take a little time to make, but if you follow the recipe exactly, you’ll get fluffy, airy buns with an almost weightless crumb and a thin, pale crust. All ingredients should be fresh and of high quality. Serve warm or chilled. Perfect with tea.

    Prepare the ingredients you need. Take the butter out of the refrigerator ahead of time so it softens.

    Warm the water, pour it over compressed yeast, and add sugar.

    Mix thoroughly until the yeast and sugar granules are completely dissolved. Set aside for 10 minutes to allow the yeast to activate.

    Meanwhile, sift the required amount of flour through a sieve; it’s best to do this twice. Sifted flour will make your bake softer. Add a pinch of salt to the flour.

    Then pour the liquid mixture into the flour and mix.

    When the flour has taken up the liquid, add soft butter and mix it into the dough.

    Knead a thick, soft dough by hand. You need to knead it for about 20 minutes so that the mass becomes even, smooth, and no longer sticks to your palms.

    Lightly grease the dough with vegetable oil so the mass doesn’t stick to the vessel, transfer it to a deep container, cover with plastic wrap so it doesn’t dry out on top. Leave the dough to rise for 1 hour. After that time, mix the dough and let it sit another 30 minutes aside to rise in volume again.

    After an hour, mix the dough and divide it into equal portions of about 50 grams each. You should end up with 16–18 pieces. Roll each one into a round ball and place on a parchment-lined baking sheet. Space the balls apart, because they will grow while baking. Cover the shaped pieces with a towel and leave undisturbed for 25 minutes; during that time the balls should rise slightly.

    Preheat the oven to 30–40°C and place the buns inside for 25 minutes. When the buns have risen, increase the temperature to 200°C. Bake the buns per GOST for 13–19 minutes until done.
