
Currant Buns
Description
Delicious baked goods for the whole family. This recipe yields about 8 buns. They are best enjoyed on the day they are made, as they become hard the next day. Serve with tea or coffee.

1. Preheat the oven to 200 degrees with the rack in the upper position. In a large bowl, mix together flour, sugar, baking soda, cream of tartar, and salt. Add softened butter to the dry ingredients and mix with a fork or pastry cutter until the mixture resembles coarse crumbs. Stir in buttermilk, currants or raisins, caraway seeds (if using), and mix with a fork until just combined.

2. Place the dough onto a floured work surface and knead until it becomes firm. Divide the dough into 8 pieces.

3. Shape each piece into a ball and place on a baking sheet lined with parchment paper and greased with oil. Make a cross-shaped cut on the top of each roll using a knife.

4. Bake for 15–20 minutes, until the internal temperature of the buns reaches 76 degrees—this method is especially convenient for recipes where doneness is difficult to judge by appearance alone. The buns should be golden brown. Remove the buns from the oven and brush with melted butter. Let cool to room temperature.
