Buns with condensed milk

Description

This dough is very difficult to knead by hand—it will take about 30 minutes, so I recommend using a food processor. The key feature of yeast-based baked goods is their lightness, which can be achieved through gentle kneading and letting the dough rise in a warm place. For the filling, you can use condensed milk, fruit puree, jam, or preserves. Serve with tea or coffee.

    Boil the milk and cool it down to 36 degrees. Mix the milk with yeast, sugar, and sifted flour. Let the starter rest in a warm place for 20 minutes.

    Then let the mixture settle three times and allow it to rise again. Transfer the starter to a bowl, add eggs, salt, sugar, lemon zest, and mix with a whisk. Add the sifted flour.

    Knead the dough for 5-10 minutes in a food processor. Then add the soft butter and continue kneading for 10 minutes. Transfer the dough to a bowl greased with vegetable oil.

    Cover the dough with a lid and let it sit in a warm place for 2 hours. Divide the prepared dough into small balls, about 50 grams each. Slightly flatten each ball, add the filling, and pinch the edges together.

    Place the shaped buns on a baking sheet greased with butter. Cover the buns with a towel and let them rise in a warm place for 1 hour.

    Brush the buns with beaten egg before baking. Bake in a preheated oven at 180°C for 20 minutes. Let the buns cool slightly, brush with butter, and sprinkle with powdered sugar.
