
Berry buns
Description
Delicious baked goods for the whole family. The buns are made from classic yeast dough. You can use dry yeast instead of fresh—you will need three times less. Choose any berries and jam to suit your taste and what you have on hand. Of course, with so much pastry on store shelves, you may not want to bother. But how nice it is when your home smells of pies you baked yourself. They go well with tea or coffee.

Prepare the ingredients for making berry buns.

Knead the dough. To do this, put the yeast in the bowl and add sugar.

Pour warm milk.

Melt the butter, let it cool slightly, then pour it into a bowl with the yeast and sugar. Add salt and vanilla sugar.

Add the sifted flour.

Knead a soft dough that doesn’t stick to your hands. A stand mixer makes this easy, but doing it by hand works well too.

Cover the dough with plastic wrap and place it in a warm spot. After an hour to an hour and a half, it will have risen in volume.

While the dough is rising, prepare the filling for the buns. Wash the blackcurrants. If yours are frozen, thaw them. Add sugar and mash lightly. Stir any jam into the berries—I used blackcurrant jam.

Mix the berries with sugar and jam.

Shape the dough and divide into 60–70 g balls. Cover with plastic wrap and let rest for 15–20 minutes. Note: «обомните» reads like a typo for «обмините» (give the dough a short knock-back/rounding). If you meant literally what was typed, «обомните» is not standard usage.

From each ball, shape a bun. With your hand, make a small tail on the dough ball.

Then roll out the dough into a teardrop shape with a rolling pin.

Place a little starch on the edge of the dough.

Spread the berry filling over the starch.

Cover the filling and seal the dough well.

Then roll it up into a roll.

In this way, make all the buns.

Let the buns proof for 20–25 minutes, brush with egg, and bake in an oven preheated to 175–180 °C.

Bake the buns for 40–45 minutes. Baking time depends on your oven.

Remove the finished buns from the oven, cool them down, then serve them at the table.
