Yeast buns with apple and cinnamon

Description

The recipe will not take much time. I like the combination of brown sugar and cinnamon, so I added brown sugar to the filling and white sugar to the dough. You can use white sugar throughout if you prefer. The apples I used were sweet and tart and quite juicy. The bake is ready. Serve at the table.

    Prepare all the ingredients. Wash the apples. The milk should be warm, so heat it up slightly in a saucepan (it should be about 35-37 degrees).

    Prepare the sponge. In a bowl, rub the fresh yeast with your fingers, then add 1–2 tbsp sugar.

    Pour warm milk over everything and whisk thoroughly until the yeast dissolves.

    Add 4–5 tbsp flour and whisk everything until the mixture is smooth and even.

    Place the bowl with the sponge, covered with a kitchen towel, in a warm place to ferment for 30 minutes.

    After 30 minutes, the sponge had noticeably increased in volume and developed a coarse, open crumb structure.

    In a separate bowl, pour in the melted and slightly cooled butter (80 grams), add the remaining white sugar and eggs.

    Mix everything thoroughly.

    Pour this mixture into the sponge starter and mix everything together.

    Then sift in the flour in portions and knead first with a spoon, then with your hands. Adjust the amount of flour as needed; in the end you should have a soft dough that does not stick to your hands.

    Shape the dough into a ball in the bowl, cover the bowl with a kitchen towel, and leave it in a warm place to rise for about 1 hour.

    After an hour, the dough will have increased in volume several times over.

    Dust your work surface with flour, then roll out the dough with a rolling pin into a rectangle. Brush the surface with softened butter (40 grams).

    Sprinkle evenly on top with ground cinnamon and brown sugar.

    Peel the apples, remove the cores and seeds, and cut into small pieces. Spread the apple pieces in an even layer on top of the cinnamon and sugar.

    Roll the dough with the filling into a roll and cut into equal pieces.

    Line a baking sheet with parchment paper and place the shaped buns well apart from each other. Brush the top of each piece with beaten egg. Bake the buns in an oven preheated to 180°C for 30–35 minutes.
