
Jam buns without yeast
Description
The pastry is prepared simply and quickly. The buns are made very easily. The dough turns out soft, pliable, and pleasant to work with. When shaping, it does not require dusting the work surface. For this result, the flour should be added in parts. You may need a little more or less of it. The pastry is ready. Serve at the table.

Prepare the necessary ingredients.

In a bowl, mix the cottage cheese, egg, and sugar.

For uniformity, blend with an immersion blender.

Melt the butter, add it to the cottage cheese mixture. Stir.

Add vanillin, salt, flour (most of it), baking soda and baking powder.

Knead a soft, non‑sticky dough. Add the flour in portions, kneading well each time. Shape the finished dough into a ball. Transfer it to a bowl, cover with a towel and place it in the refrigerator for 40 minutes.

While the dough is cooling, make the crumb topping. Mix the flour, butter, and sugar in a cup.

Rub the dry mixture well with your hands. It should turn into a buttery‑flour crumb.

After 40 minutes, remove the dough from the refrigerator and divide it into 8 equal parts. Roll each into a ball.

Line the baking tray with parchment paper. Place the pieces, and using a small cup make depressions in the center.

In the indentations spread the jam. Approximately one heaping tablespoon per bun. Brush the buns with egg yolk and sprinkle with butter‑flour crumbs. Place the buns in a preheated oven at 180 °C for 30–35 minutes. Take into account the peculiarities of your oven.

Remove the baked buns from the oven. Let them sit on the baking sheet for 15 minutes, then lift them off the sheet.

The buns can be served either warm or completely cooled.
