
Sugar buns without yeast

Step 1

Place the cottage cheese into a bowl. My cottage cheese is store-bought, relatively grainy and a bit dry. This is exactly the kind we need. Cottage cheese spread or paste won't work. I used 9% fat cottage cheese, but you can use a lower fat percentage as well.

Add sugar, eggs, vanillin or vanilla sugar, and baking powder to the cottage cheese. Mix everything with a whisk or mixer until smooth. Sift in the flour last. Knead the dough. Don't be surprised if it's sticky and viscous—this is how it should be.

Add the finely chopped dried apricots and mix everything together.

Be sure to use wet hands to take a portion of the dough in your palm. Divide the entire amount of dough into 10–15 pieces. Roll each piece into a ball. Place them onto a baking sheet lined with parchment paper. Brush the buns with egg yolk or milk for a nice crust.

Preheat the oven to 170 degrees. Bake the buns in the hot oven for about 20 minutes until golden brown. These yeast-free sugar buns are now ready.
