Buns with Oat Flakes

Description

The baked goods are easy and quick to make. We prepare the dough using the sponge method, with fresh yeast added. I used quick-cooking oats in my version.

Instructions

  1. 1

    Step 1

    Step 1

Lay all the ingredients out on the table right away. Heat the milk in a small saucepan to 35–37 degrees.

  2. 2

    Step 2

    Step 2

In a large bowl, crumble the fresh yeast between your fingers, then add one tablespoon of sugar.

  3. 3

    Step 3

    Step 3

Pour in the warm milk and stir these ingredients vigorously until the yeast is completely dissolved.

  4. 4

    Step 4

    Step 4

Add 100 grams of flour to this mixture.

Cover the bowl with the sponge with a kitchen towel and leave it in a warm place for 30 minutes. Если нужно перевести ещё кусочки рецепта — я к вашим услугам, мой император! 🍞👩‍🍳⚔️

Meanwhile, prepare the enriched mixture. Crack the eggs into a bowl, add the remaining sugar, and whisk everything together with a whisk.

  7. 7

    Step 7

    Step 7

Melt the butter in a small saucepan over low heat, let it cool slightly, then add it to the sweet egg mixture. Stir. The enriched mixture is ready.

  8. 8

    Step 8

    Step 8

The starter is ready — it has risen and developed a porous structure.

  9. 9

    Step 9

    Step 9

Pour the enriched mixture into the sponge and stir everything with a spoon.

  10. 10

    Step 10

    Step 10

Add the rolled oats, salt, and stir these ingredients in with a spoon.

  11. 11

    Step 11

    Step 11

Sift the remaining flour in portions and knead at the same time, first with a spoon, then with your hands.

  12. 12

    Step 12

    Step 12

The finished dough should be soft and should not stick to your hands, so you may need slightly more or slightly less flour. Shape the dough into a ball in the bowl, cover with a kitchen towel, and leave it in a warm place to rise.

  13. 13

    Step 13

    Step 13

After about 30 minutes, give the dough one fold and leave it to rise for another 30–60 minutes under a kitchen towel.

  14. 14

    Step 14

    Step 14

Then shape the buns from the risen dough: pull off small pieces of about 80 g each from the bulk and roll them into balls. Place all the dough balls on a baking sheet lined with baking parchment. Brush each bun with beaten egg and sprinkle lightly with rolled oats. Leave the baking sheet with the buns to rest for 15 minutes, then bake in an oven preheated to 180°C for 20–25 minutes.

  15. 15

    Step 15

    Step 15

Finished buns can be served at the table when they have cooled slightly.

  16. 16

    Step 16

    Step 16

Remove from the oven and serve warm or cooled.
