
Buns with almond cream
Description
Delicious baked goods for the whole family. You can make almond flour yourself or use store-bought. If you grind almonds into flour yourself, you don’t need to grind them too fine—leave noticeable pieces.

First, prepare the ingredients for making the dough. Warm the milk slightly.

In a large bowl, rub the yeast with your hands and add one tablespoon of sugar.

Pour in warm milk and vigorously whisk these ingredients until fully dissolved.

Sift 100 grams of flour.

Whisk everything together until you have a homogeneous mixture — this is the sponge. Cover the sponge in the bowl with a kitchen towel and let rest for 30 minutes.

After half an hour, the sponge had risen noticeably and developed a porous structure.

Beat the egg into a bowl and add the remaining sugar. Whisk these ingredients vigorously.

Pour in the melted butter that has cooled slightly. Mix.

Pour the butter mixture into the sponge and mix it in.

Now sift the flour in portions, mixing it in with a spoon as you go, then knead by hand.

Knead a soft dough that does not stick to your hands. Shape the dough into a ball in the bowl. Cover the bowl with a kitchen towel and place it in a warm place to rise for 1.5–2 hours.

Gather the ingredients for making almond cream. Wash the egg shells thoroughly using soapy water.

Place soft butter in a bowl and add sugar to it.

Divide all the dough into portions of about 70 grams each and roll them into balls.

Dust the work surface with flour, place one ball of dough on it, and roll it out with a rolling pin into an oval. Spread 1–2 tsp. almond cream on one half of the dough.

Cover the cream with the dough and seal the edges as shown in the photo. Make slits in the exposed part of the dough.

Line a baking sheet with parchment paper, arrange all the shaped buns on it, and brush each one with a whisked mixture of egg yolk and 1 tsp water. Bake the buns in an oven preheated to 180°C for 20–25 minutes.
