
Muffins with Raspberry and Lemon Glaze

1. Preheat the oven to 200 degrees. Line a baking sheet with parchment paper. Grate the lemon zest. To prepare the dough for the buns, sift all dry ingredients together and mix with the zest of one lemon. Using a fork, add the butter into the flour and mix until the mixture resembles wet sand.

2. Make a depression in the center and pour in the cream, mix. Add the raspberries and gently stir, taking care not to crush the berries.

3. Place the dough on a floured surface, roll out into a rectangle approximately 30x7.5 cm and 3 cm thick. Cut the rectangle in half, then cut each resulting rectangle in half again, to make 4 rectangles.

4. Cut each rectangle into 8 squares, and then each square into 16 triangles.

5. Brush the tops of the buns with a small amount of cream and bake for 15-20 minutes. Let the buns cool slightly before applying the glaze.

6. To prepare the glaze, beat the powdered sugar with strained lemon juice. Add softened butter, beat again, and pour the glaze over the buns. Let the glaze set and serve.
