
Buns with dried apricots
Description
Homemade pastries for tea. These dried apricot buns turn out light and delicious. Many people enjoy the shaping method. Dried apricot buns go well served not only with tea or coffee, but also with warm milk, ryazhenka, or kefir. Good luck, and serve them cooled or lightly warm.

Dissolve 1 teaspoon sugar and stir in the yeast in ¼ cup milk (it must be warm). Cover with plastic wrap and lay a towel on top. Leave for a short time until foam forms.

Next, sift the flour into a bowl. Make a small well in the center and pour in the remaining warm milk and the yeast. Knead together. Then add the salt and the melted butter.

Shape the dough into a ball and place it in an oiled bowl, cover with a towel, and leave for a while so the dough can rise. It should double in size!

Arrange the dried fruit in small bowls and pour boiling water over them. Then drain off the water and dry the dried fruit. Cut the dates and dried apricots into small cubes.

When the dough has risen to the desired volume, take it with your hands, roll it into a log, cut it into small pieces, and use a rolling pin to roll out circles. Place filling to taste in the centre of each circle. Seal them and transfer to a pan that has been lined in advance with parchment paper.

In a cup, whisk the egg yolk with 1 tablespoon of warm water. Brush the buns with this mixture and sprinkle with sugar. The buns may be baked in the oven for 20–30 minutes at 190 degrees.
