Step 1

1. Prepare the dough. Mix milk and butter in a bowl. Heat the mixture in the microwave until the butter melts, about 30 to 45 seconds. Pour the mixture into a large bowl. Add 1 cup of flour, sugar, egg, yeast, and salt. Beat with a mixer at low speed for 3 minutes. Add an additional 2 1/2 cups of flour. Mix at low speed. If the dough is very sticky, add more flour. Turn the dough out onto a lightly floured surface. Knead for about 8 minutes. You can also use a dough hook. Shape the dough into a ball.

2. Spray a bowl with vegetable oil. Place the dough into the bowl and roll it around to coat with oil. Cover with plastic wrap, then with a kitchen towel. Let rise in a warm place for about 2 hours, until doubled in volume. To prepare the filling, mix brown sugar, cinnamon, and a pinch of salt in a medium bowl. Turn the dough out onto a work surface. Roll into a 27x37 cm rectangle. Brush the dough with butter, leaving a 1 cm border around the edges. Evenly sprinkle with the filling.

Step 3

3. Roll the dough into a log, place seam-side down on the surface, and cut into 18 slices using a sharp knife (each slice about 1 cm wide).

Step 4

4. Spray two baking pans with oil. Place the buns into the pans, cover with a kitchen towel, and let rise in a warm place for 40-45 minutes, until they nearly double in size. Place the pans in the center of the oven and bake the buns at 190°C until golden brown, about 20 minutes. Remove from the oven and let cool for 10 minutes.

5. Prepare the glaze. Mix cream cheese, powdered sugar, butter, and vanilla extract in a medium bowl. Beat with a mixer until smooth. Spread the glaze over the finished buns. Serve warm or at room temperature.
