Description

Homemade baked goods for tea. You'll need yeast for the buns—use whichever type you prefer. If using instant yeast, mix it directly with the flour. If using granulated or fresh yeast, dissolve it in warm milk together with sugar. The buns will turn out tender and fluffy with any type of yeast! I used 550 grams of flour in total, of which 520 grams went into the dough and the rest for dusting the work surface. If you don't have a scale, this equals 4 cups of 250 ml each, leveled off.

    Prepare all the necessary ingredients. Warm the milk to 38-40 degrees. Separate the egg into yolk and white. Melt the butter for the dough and let it cool slightly.

    In a large bowl, mix the flour with instant yeast.

    In another bowl, combine the liquid ingredients. Dissolve salt and sugar in the milk, then add the egg white and butter. Mix well.

    Pour the liquid ingredients into the flour mixture. Start kneading with a spoon, and when the dough becomes dense, transfer it to the table. Knead until you get a soft smooth ball.

    Place the dough in a bowl, cover with a towel, and set aside in a warm place for 1.5 hours.

    By this time, the dough should have increased in size two to three times. Press it down with your hands. Knead it into a ball.

    Dust the table with a little flour. Roll out the dough into a rectangle; the size is not important, but the thinner, the better.

    Generously brush the dough with melted butter using a silicone brush. Sprinkle 50 grams of sugar and 1 tablespoon of ground cinnamon on top. Roll the dough into a log. Cut it with a sharp knife into 12 pieces.

    Line the baking sheet with parchment paper or grease it with vegetable or butter. I use silicone-coated parchment paper. It's very convenient—baked goods never stick to it, unlike regular brown parchment paper.

    Brush the buns with egg yolk and sprinkle sugar on top for a delicious sweet crust.

    Cover the buns with plastic wrap and let them rise in a warm place for 30 minutes. During this time, preheat the oven to 180 degrees.

    The buns have risen slightly. Bake them in the oven for 20-25 minutes.
