
Raisin buns made from yeast dough
Description
Delicious baked goods for the whole family. My grandmother shared this recipe with me; she calls it Viennese pastry dough. This dough makes absolutely wonderful buns, pies, and Easter breads. In fact, she uses this very recipe for her signature Easter breads. To be honest, the first time I tried making this dough, it didn't turn out quite like my grandmother's, so the buns weren't as tasty. But over time and with practice, I've gotten better and better. I won't say it's perfect yet—after all, my grandmother's pies are the taste of childhood, and they're simply unbeatable—but my family is absolutely delighted with my pies, croissants, and buns. Today, I'd like to share this recipe with you. Serve warm or chilled. Perfect with tea.

Prepare all the necessary ingredients. Slightly warm the milk to a temperature of about 40 degrees. Yeast will not activate in liquid that is too cold or too hot. To test the milk temperature, drop a small amount on your wrist; if it doesn't feel hot, it's at the ideal temperature.

Add sugar and yeast to the milk, mix well. Add a little flour (2-3 tablespoons), stir, and let the starter sit in a warm place for 30 minutes.

First, a high foam cap will appear on the surface, and when it starts to collapse and bubbles appear, the sponge is ready.

In another deep bowl, mix the eggs, sugar, and melted margarine.

Add the sponge and mix well. Add the raisins.

Gradually add the sifted flour and stir with a spoon, moving in one direction. When it becomes difficult to stir with a spoon, transfer the dough onto a work surface and knead by hand.

The dough should turn out very soft and tender. Transfer it to a bowl, cover with a clean towel, and leave in a warm place for 1–1.5 hours to let it rise. Usually, I place it near a heated stove burner.

When the dough has doubled in size, it should be kneaded again and left to rise once more.

Divide the dough into 8 equal parts. Shape them into round flatbreads. Place on a baking sheet, brush with beaten egg, and sprinkle with sugar. Bake in the oven for 30-40 minutes at 180 degrees.
