First, you need to prepare the starter. To do this, heat 100 milliliters of whey and dissolve the yeast in it. After fifteen minutes, add the sifted flour, the remaining whey, raw eggs, sugar, and melted butter to the starter. Knead an elastic dough, cover it with plastic wrap or a towel, and let it rise for an hour and a half. Then remove the dough from the container and divide it into twelve equal parts.

Peel ripe bananas and slice them into rounds into a bowl. Mash the bananas with a fork or blend with an immersion blender until smooth. Add granulated sugar and lemon juice to taste. Then roll out all the dough pieces, and place the banana filling on them.

Carefully roll each piece of dough into a tube, sealing the edges so that the bun resembles a banana in shape. Place the prepared buns on a baking parchment previously laid on a baking sheet. Let the buns rest for about half an hour.

Cook the custard cream. To do this, combine starch, milk, two yolks, and sugar in a saucepan, and cook for five minutes over low heat. Place the cream into a piping bag or syringe. Pipe stripes of cream onto the dough.

Set the oven temperature to 190 degrees. When the oven is preheated, place the baking sheet with the "bananas" inside and bake for fifteen minutes until fully cooked and golden brown.
