
Pineapple Buns
Description
Pineapple buns are a fairly simple yeast dough pastry, moderately sweet, with an interesting berry tang. If you enjoy working with yeast dough, feel free to add this recipe to your cookbook. It's very easy, and the buns turn out very tasty and juicy. You need to add egg white to the filling so that it doesn't let the juicy pineapple leak out and give the buns an unsightly appearance. You can use your favorite berries—lingonberries and cherries complement the pineapple flavor beautifully. When serving, garnish the buns with berries and dust with powdered sugar. Brew a delicious tea and enjoy the dessert. It can be served with tea or coffee.

For starters we need to turn on the oven and preheat it to 180 °C. Then prepare the starter for the dough. Mix a spoon of flour with the yeast, warm milk (100 ml) and 1 spoon of sugar. Mix everything well and place it in a warm spot for about 15 minutes.

In a deep bowl, combine the remaining ingredients: melted butter, vanilla, sugar (0.5 tbsp), salt (0.5 tsp), milk (50 ml), yogurt and 1 egg. Mix everything well until smooth.

Then add the flour in small portions, knead a homogeneous dough.

Cover the dough with a towel and place it in a warm spot for about 40 minutes; it should increase two to three times in size. Punch it down and let it rise again.

When the dough has risen, becomes soft and airy, divide it into 8–12 pieces.

Roll each piece into a thin sheet. Mix the pineapples with the berries and the white of a second egg. Spread the filling onto each sheet of dough.

Roll the dough into tubes and twist them into a snail shape. Perform this operation with all pieces of dough. Brush the buns with the yolk of the second egg.

Place the buns on a baking sheet and let them rest for another 20 minutes. Then put them in the preheated oven and bake for 25–30 minutes. The buns are ready.
