Apricot jam buns
Description
The baked goods come together simply and quickly. These buns are easy to make, but like anything made from yeast dough, they need time. In this recipe I add condensed milk to the dough—that’s what makes the buns so tender and fluffy. If you haven’t tried baking them this way yet, do—it’s worth it.

Place the dough in a warm spot, first covering it with plastic wrap. After 1.5 hours, the dough will increase 2 to 3 times in volume.
- 11
Step 11

Afterwards, remove the dough from the pan and cool it slightly. Divide into balls weighing 60–70 grams.

Roll each ball into an oval. Spread the apricot jam in a strip.
- 13
Step 13

Cover the jam with dough, and seal the edges of the dough.

Step 14

Roll the dough into a rope.
- 15
Step 15

Then roll into a spiral with the seam facing up.

Second variant of buns. Roll out the dough into an oval. Spread jam on the edge.

Just as in the first method, cover the jam with the dough and seal the edges. Using a small rolling pin or a knife, make holes in the second piece of dough. Roll it up and shape into a crescent (rugelach).

Step 18

Place the buns in a baking dish. Let rise for 20 minutes, then brush with egg.
- 19
Step 19

Bake the buns in an oven preheated to 175–180 °C for 35–40 minutes. Baking time depends on your oven.
- 20
Step 20

The apricot jam buns are ready. You can set the table for tea.
