Divide the enriched dough into two equal parts and shape each part into a ball. Cover one part with plastic wrap and set aside. Divide the remaining dough into four parts, shape each into a ball and roll into a round shape.

Roll out one ball into a thin round flatbread and place it on a circular surface the size of the future pie, lined with parchment paper. Brush the flatbread with olive oil and evenly sprinkle several spoons of sugar over it.

Place the second layer of dough on top and align it with the first layer. Brush the second layer with olive oil, sprinkle sugar evenly over it, and place the third layer on top.

Level it with the other layers, brush with olive oil, sprinkle with sugar, and place the fourth layer on top. Mark the top flatbread into 16 sections, and use a glass to outline a circle in the center that will not be cut.
