Description
The recipe won't take much time. The signature of the buns is considered to be the dark crust. It is achieved thanks to the sugar content in the dough; its amount differs from the usual addition in yeast dough. The glossy top is obtained by brushing the pieces with an egg‑milk mixture. Prepare the necessary ingredients.

In a bowl, combine 200 grams of flour, 7 grams of yeast, 65 ml of water, and 75 ml of milk.

Make the starter. It will turn out denser than usual. Therefore, roll it into a ball.

Make a cross-shaped cut in the dough, cover the bowl with plastic wrap, place a towel on top, and let it sit for 4 hours at room temperature.

After the starter has finished fermenting, prepare the eggs. Crack 2 eggs into a bowl, whisk them with a fork and measure out 65 g. This amount is needed for the dough. The remaining amount will be used to glaze the buns.

Make a yeast solution. Take a deep bowl. Pour 70 ml of water into it, add 130 grams of sugar, 5 grams of salt, 7 grams of yeast and stir with a whisk.

Ready pre-ferment.

Add the yeast solution to the starter, add the flour, and begin kneading the dough. It is better to add the flour in portions; you may need a little more.

The finished dough has a soft consistency; it may stick slightly to the hands, but it should not have a spreadable texture. Do not over‑flour the dough, otherwise it will take a very long time to rise.

After two hours, the dough has noticeably risen and is ready for shaping.

Divide the dough into 9 equal parts, roll them into balls. My average weight for one piece turned out to be 123 grams.

Take a mold or a small baking sheet. Line it with parchment paper or grease it with butter. Place the pieces no more than 1 cm apart from each other. Cover with a towel and let sit at room temperature, away from drafts, for 1 hour.

After an hour, brush the buns with the remaining beaten eggs mixed with 3 Tbsp of milk. Preheat the oven to 200 °C. Place the prepared buns in the preheated oven for 25 minutes.

Remove the finished baked goods from the oven, immediately transfer them to a board, and let them cool.
