Description

Perfect with tea and coffee. During mixing you may need a little more flour, but try not to overload the dough with it. A slight stickiness is acceptable in this recipe. Steaming is an essential aspect of this bake. Can be served with tea or coffee.

    In warm water (36‑38 °C) dissolve the salt, sugar and yeast. Mix well.

    Add the flour to the bowl, add the butter. Rub it with the flour.

    Pour the yeast solution into the flour with butter. Start kneading with a spoon.

    As soon as it becomes difficult to mix with a spoon, knead by hand. The dough will be slightly sticky, but to avoid coating it with too much flour, dust your hands with flour. In total, knead the dough for about 10 minutes. If you have a mixer with a “hook” attachment, use it. The finished dough should be smooth and elastic. Shape it into a ball, place it in a bowl greased with vegetable oil, cover with plastic wrap, and let it rest for 1.5 hours in a warm, draft‑free place.

    After the time has passed, check the dough. It will have increased in volume. Poke it with your finger in several places. If the dimples do not spring back, the dough has risen and is ready for shaping. If the dimples recover quickly, let the dough rest a little longer, up to 30 minutes.

    Transfer the dough onto a work surface lightly dusted with flour. Divide into portions. The approximate weight of one piece varies from 45 to 55 grams.

    Form the buns. Take a piece of dough and flatten it into a disc. Then, around the circle, fold the edges toward the center.

    Take the resulting ball and shape it into a more rounded form. Roll the piece across the table in one direction.

    Place the resulting balls on a parchment‑lined baking sheet, spaced apart. Cover with a towel and let rest for 45 minutes for the final rise. Preheat the oven to 250 °C and place a pan of water on the bottom. After the resting time, spray the buns with water and bake for 10 minutes. When that time is up, remove the pan of water and bake the buns for another 7–9 minutes.

    Let the finished buns cool slightly on the baking sheet, then remove them.
