
Sourdough Buns
Description
Sourdough buns turn out light, fluffy, and delicious. If you like, add raisins or other dried fruit to the dough before shaping. You can also glaze the hot buns with sugar icing if you wish. Serve warm or chilled. Perfect with tea.

All ingredients are shown in the photo. Feed your wheat sourdough starter 6 hours before you begin cooking.

Into a large bowl, sift the flour and add the sugar. Mix.

Add the starter.

Pour in the warm milk.

Knead the dough and add soft butter and salt. Work it into the dough and continue kneading by hand. I kneaded for about 10 minutes. As you go, add a little flour if necessary, but don’t overload the dough with flour.

In the end, the dough should be soft and smooth. Shape the dough into a ball in the bowl and cover the bowl with plastic wrap. Leave it in a warm place in the kitchen to rise for about 3 hours.

Now, for easier bun shaping, divide all the dough into small portions weighing 60–70 grams. Roll each portion into a ball, greasing your hands with vegetable oil as you go. Cover the balls with a kitchen towel and let them rest for 10 minutes.

Place the dough balls on a baking sheet, brush them with a mixture of beaten egg yolk and 1 tsp. water, and sprinkle lightly with sugar. Leave the buns on the baking sheet for 30 minutes, then bake in a preheated oven at 180°C for 25–30 minutes.

Ready buns can be served hot at the table.
