Description

Homemade baked goods for tea. I use a bread machine to prepare the yeast dough. Of course, you can also knead this dough by hand using a no-sponge method with two rises. The addition of fermented rye malt will give the buns a beautiful dark color, while flax seeds will enhance the flavor. The result will be rustic, hearty buns with a dense yet soft crumb, perfect as a breakfast treat or a base for a healthy sandwich at dinner. The key is having various flours and a good mood. The baking is ready. Serve at the table.

    Rinse quinoa thoroughly, pour boiling water over it, and let it cool. Drain through a sieve and use in the buns. Place the ingredients into the bread machine pan according to your model's instructions. I start with the liquids: a mixture of water and whey, egg, and vegetable oil. Then I add honey, salt, malt, and mix. Next, I add the sifted mixture of different flours, the prepared quinoa, and flax seeds. Finally, I place the yeast on top.

    Start the dough kneading.

    Then I let the dough rise until it doubles in volume and start the kneading process again.

    Let the dough rise to the edges of the bucket.

    Divide the dough into pieces the size of a medium apple. Roll them into balls, place on a baking sheet lined with a silicone mat, and make a couple of slashes on each roll. Cover with plastic wrap and let rise until doubled in size.

    I brush the buns with sweetened water and sprinkle a little flour on top.

    I place them in an oven preheated to 60°C, pour a glass of hot water onto the bottom, let the buns rise with steam for about 10 minutes, then bake, increasing the temperature to 200°C.

    I remove the finished buns from the baking sheet onto a towel, "wash" them with cold water, and cover with a towel, leaving them to cool.

    The buns turn out unsweetened and neutral, perfect to serve with meat or cheese platters, or to use in burgers. They also make a great snack with a glass of milk.
