Description
If you love homemade baked goods, I highly recommend making these buns. In terms of texture, I wouldn't even call them buns, but rather pastries (they're that tender). You can confidently bake them as a dessert for a festive table. So, let's get started. Serve them cooled or slightly warm.

1. Prepare the dough: warm the milk to room temperature, then add sugar, salt, dry yeast, and mix well.

2. Add the chicken egg and mix well. Let it sit for 5–10 minutes to allow the yeast to activate.

3. Sift the required amount of flour into a separate bowl, making a depression in the center. Pour in the liquid mixture (yeast with milk) and mix thoroughly.

4. You should get a soft dough; add to it the softened butter with lemon zest and knead until you have a sticky dough (if necessary, you can add 20 grams of flour). Let the dough rest at room temperature for 1.5–2 hours.

5. For the cream: pour milk into a saucepan, add vanilla (1 packet), lemon zest, granulated sugar, starch, and a chicken egg, then mix thoroughly.

6. Heat a saucepan over medium heat and cook its contents until a thick mixture forms, stirring constantly. Once thickened, remove from heat and let cool slightly.

7. Add butter to the cream, mix with a whisk, pour in the lemon juice, and mix again.

8. The dough has already risen, place it on a tray and divide into 12 parts.

9. Roll each piece into a thin flatbread, place a spoonful of cream almost in the center, cover with one part of the dough, and cut the second part into 1-centimeter strips with a knife, then wrap the strips over the dough.

10. Place the buns on a baking sheet lined with parchment paper, cover with a towel, and let rise for half an hour. Beat one egg in a bowl and brush the buns with it. Bake at 180°C for 30-35 minutes.
