Description

Delicious baked goods for the whole family. You don't necessarily need to prepare yeast-raised dough to make tasty sweet buns. Instead, you can use a wheat sourdough starter as the base—baked goods made with it turn out not only delicious but also healthy. The main feature of these buns is the sugary filling and the crumbly topping, which forms a soft, sweet crust on the surface during baking. You can shape the buns differently, but make sure the sugar filling stays inside the roll during baking. Serve warm or cooled. Perfect with tea.

    1. Prepare the starter: dilute the starter with room-temperature water and mix well. Add the sifted flour and mix. Cover the mixture with plastic wrap and let it sit for 8 hours at room temperature.

    2. Transfer the sponge to the bowl of a mixer, add room temperature water and mix. Add vegetable or soft butter, salt, eggs, and sugar. Mix until smooth, then add the sifted flour.

    3. Mix the dough for 1 minute at speed 1, then knead for 5 minutes at speed 2. Shape the dough into a ball and transfer it to a bowl greased with vegetable oil. Cover the dough with plastic wrap and let it rest at room temperature for 3–4 hours.

    4. Place the dough on a floured work surface and shape it into a round. Divide the dough into two parts, covering one part with plastic wrap. Divide the other part into 12 pieces and shape each into a round.

    5. Roll each ball into a thin round sheet, place a strip of granulated sugar along the edge, roll it up into a roll, and seal the ends on both sides.
