Cinnamon buns for tea

Description

The baking is simple and quick. You can prepare cinnamon tea, or serve aromatic buns made according to this recipe with your tea. The result is very light pastries with a delicate crisp crust, and they're also healthy since they're made with wheat sourdough. Be sure to add plenty of candied fruits and dried fruits to the dough so that the buns have a special touch. Additionally, I recommend decorating them with a glaze made from powdered sugar and cream—it will give the buns a nice shine. Serve warm or chilled. Perfect with tea.

    1. Prepare the starter: mix water with the starter culture, stir well. Add flour and mix again thoroughly. Cover with plastic wrap and let sit at room temperature for 8 hours.

    2. Rub the sifted flour with the butter until it resembles crumbs. Add the starter, warm milk, salt, cinnamon, sugar, eggs, and the mixture of dried fruits and candied fruits. Knead the dough for 5 minutes at speed 2 in a stand mixer.

    3. Place the dough in a bowl greased with vegetable oil. Cover with plastic wrap and let sit at room temperature for 3–4 hours. Turn the dough out onto a floured surface, gather the edges toward the center, and shape into a ball.

    4. Divide the dough into 16 pieces and shape them into balls. Form the buns and place them on a parchment-lined baking sheet. Cover with plastic wrap and let rise at room temperature for 1 hour.

    5. Bake the buns in a preheated oven at 180 degrees for 20 minutes. Prepare the glaze: mix the cream and sugar, place over heat, bring to a boil and cook until the sugar dissolves completely.
