Puff pastry buns with cottage cheese and raisins
Description
The recipe won't take much time. To save time on making puff pastry, you can use store-bought pastry (not yeast-based, but specifically puff pastry). Add not only raisins to the filling, but everything you like: dried apricots, prunes, dried cherries, nuts... If you previously thought only your grandmother knew how to make it, think again. Serve with tea or coffee.
Instructions
- 1
Step 1

1. First, prepare the dried fruits. Pour boiling water over them and let them sit for a few minutes. Then drain the water and pat the dried fruits dry with paper towels.
- 2
Step 2

2. Add one egg to the sour cream and mix until smooth. I use 20% fat sour cream.
- 3
Step 3

3. Add the previously prepared sour cream with egg, vanilla, and sugar to the cottage cheese. Add sugar to taste, depending on your preference. Mash the mixture well with a fork—do not use a mixer, as it will become too runny.
- 4
Step 4

4. Add dried fruits to the resulting mixture, stir, and refrigerate while we prepare the dough.
- 5
Step 5

5. Take out the dough and roll it out into a rough rectangle; it doesn't need to be too thin. Spread the filling over the entire surface, leaving the edges free.
- 6
Step 6

6. Using a towel or silicone mat, roll the dough into a roll. Pinch all the loose edges to prevent them from coming apart.
- 7
Step 7

7. Cut the roll into pieces 5-6 cm in size—these will be our buns! Carefully place them on parchment paper.
- 8
Step 8

8. Brush each bun with beaten egg yolk. Preheat the oven to 180-200 degrees and place the baking sheet inside. Thirty minutes will be enough for the buns to bake.
- 9
Step 9

9. The filling is prepared very quickly. If the cottage cheese happens to leak a little, don't worry, the taste won't be spoiled. Sprinkle everything with powdered sugar on top. After half an hour, you can enjoy the amazing taste of fresh, warm pastry.
