
Buns
Description
Homemade baking for tea. For a good result, it is worth giving the dough time to rise. A long rest and several rounds of folding will make the buns airy and very soft. They can be served with tea or coffee.

Prepare the necessary ingredients.

Pour water into a bowl. Dissolve the yeast in it.

Add 250 grams of flour from the total amount. Mix well.

Cover the bowl tightly with plastic wrap. Place it in a warm spot for 1.5 hours.

After the allotted time has passed, the sponge should be covered with many bubbles and sunken in the center.

Add soft butter, salt, sugar, and the remaining flour to the bowl with the sponge. Knead the dough.

Knead the dough for 2–5 minutes. Slap it against the work surface and knead thoroughly. You want soft, evenly mixed, slightly moist dough. Shape it into a ball and transfer to a bowl. Cover the bowl and leave it in a warm place for 2 hours.

After an hour, the dough will have risen noticeably. Punch it down. Put it back in a warm place for another hour.

While the dough is rising, prepare the crumble. Combine 20 grams of soft butter and 50 grams of flour. Rub until crumbly. Refrigerate.

After one hour, divide the dough into balls. Place them on the work surface. Leave under a towel for 10 minutes. After that, turn each piece over and gently pull the edges together into a “bundle.” Round them slightly again on the table. Place the pieces on a baking sheet lined with parchment paper. Leave under a towel for 40 minutes.

In a bowl, beat 1 egg with a pinch of salt using a fork. Brush each shaped piece generously. Sprinkle crumb topping over the tops. Bake the buns at 190°C for 25 minutes.

Take the baked buns out of the oven. Let them cool a little on the baking sheet, then remove them from the pan.
