Instructions
- 1
Step 1

For the sponge, mix the yeast and warm water in a bowl and let stand for 5 minutes.
- 2
Step 2

Mix the activated yeast and softened butter with sugar. Add the egg and milk, and stir.
- 3
Step 3

Gradually add the sifted flour and knead the dough. Add the salt at the very end. Knead the dough for 7–9 minutes until it becomes soft and elastic. Initially, it may stick slightly to your hands, but it will stop during the kneading process. Grease a bowl with vegetable oil, place the dough inside, cover it, and let it rise in a warm place for 90 minutes. I use a multicooker: I set it to the "Multicook" mode (35 degrees for 15 minutes with the lid closed).

Step 4

After an hour and a half, the dough rose beautifully.
- 5
Step 5

Divide it into 12 equal parts, approximately 108–110 grams each. Flatten each piece into a disc, gather the edges into a knot, flip seam-side down, and shape into a round ball.
- 6
Step 6

Place the shaped buns seam side down on a baking sheet lined with parchment paper or a silicone mat. The baking sheet can hold 6 buns. Cover them with plastic wrap and let rise for 1 hour.
- 7
Step 7

Preheat the oven to 200 degrees. In a bowl, mix 1 egg with 1 tsp of water, brush the risen buns with the mixture, and sprinkle with sesame seeds on top.
- 8
Step 8

Bake the buns in a preheated oven for 15–18 minutes until golden brown. Cool them on a wire rack.

Step 9

Here's such a wonderful crumb.
