Description
The baking is simple and quick. You will only have to work twice for 10 minutes each – when mixing the dough and shaping the rolls. The rest of the time will be spent on the dough and roll pieces rising. I saw the secrets and the dough‑mixing technique on the popular cooking TV show “Honest Bread”. Now I’m happy to share them with you. Serve warm or cooled. Perfect with tea.

Prepare the ingredients.

Dissolve the yeast in water at room temperature. Sugar – in milk. Beat the eggs.

Add everything at once to the flour with salt, and mix.

As soon as the flour has absorbed all the liquid, add the softened butter. Knead the dough for 10 minutes. The dough becomes elastic, smooth, and slightly sticky to the hands.

Place the dough in a bowl greased with butter, cover with plastic wrap, and leave at room temperature for 90 minutes to ferment. The dough should increase 2–3 times.

Weigh the dough and divide it into 12 equal parts. I ended up with about 80 g each. Flatten each piece with the base of your palm into a round disc, removing excess gas. Gather the dough from the edge toward the center, pressing with a finger, and flip it with the knot facing down. Place your palm on top, rotate counter‑clockwise. This rounding technique will give you buns with an airy crumb and uniformly fine holes.

Grease a rectangular or square baking sheet with high sides with butter. Place the balls on the sheet with a small distance between them. Cover the buns with plastic wrap and let them rise for 90 minutes.

During proofing and baking, the buns will touch each other and rise evenly upward.

Preheat the oven to 200 degrees. Lightly spray the buns with water, place them in the oven to bake for 15–20 minutes until a golden crust forms.

Cover the hot buns with a towel, flip them onto the towel, and then onto a rack until completely cooled.
