
Sourdough Buns
Description
Perfect for serving with tea and coffee. These buns have a very unique appearance, resembling cream puffs. What makes these buns special is the large amount of butter in their composition. Usually, such buns are made with yeast dough, but this recipe proves they can also be made using a sourdough starter. It's best to bake these buns in muffin tins, as they will hold their shape better. Brioche can be served with soup or on its own with butter. The baked goods are ready. Serve at the table.

1. Prepare the starter: place the starter culture into a bowl, add water and mix thoroughly. Add flour and mix. Cover the bowl with plastic wrap and let it sit at room temperature for 8 hours.

2. Sift the flour and mix it with salt and sugar. Mix the chicken eggs with cold water and stir until a light foam appears. Place the starter, flour mixture, and egg mixture into the bowl of a mixer. Knead the dough for 5–7 minutes at speed 2.

3. Cover the dough and let it rest. Grate the frozen butter on a coarse grater and place it in the freezer for 15 minutes. Add the grated butter to the dough in small pieces, constantly kneading it in.

4. Knead the dough for another 7–10 minutes. Shape the dough into a ball, place it in a bowl greased with vegetable oil, and cover with plastic wrap. Let it sit at room temperature for 4 hours. Fold the dough: stretch it into a rectangle with your hands.

5. Fold the dough into thirds twice and place it in a bowl seam-side down. Cover with plastic wrap and refrigerate for 12 hours. Remove the dough from the refrigerator and place it on a work surface. Roll the dough into a log 5-7 cm in diameter and divide it into 12 pieces. Shape each piece into a ball.

6. Shape the buns: take 1/3 of the dough from a ball, roll it into a small ball, and place it into the hole previously made in the larger ball. Arrange the buns in a baking pan.

7. Cover them with plastic wrap and let sit at room temperature for 1 hour. Brush the buns with egg yolk mixed with water. Place in a preheated oven at 190°C for 15–20 minutes. Let the buns cool slightly in the pan, then transfer them to a wire rack.
