
Buns in a bread maker

Homemade pastries for tea. Believe me, once you learn how to make buns in a bread machine, you'll hardly ever want to prepare them any other way. It's truly simple, and the result is excellent! Golden buns with tender, dense crumb and a crispy crust will surely delight you and your family! So, pour dry yeast, flour, salt, sugar, spices into the bread machine container, and add butter—no need to melt it, the machine will handle that. Break in the eggs. Pour in the liquid: if you use water, the dough will turn out more "bread-like" and light; if you use milk, the buns will be richer and denser. Buns made with whey are especially delicious—I often use it. Turn on the bread machine and select the "Dough" mode. The kneading cycle will last about 2 hours. Five minutes before the cycle ends, add the raisins. When the machine beeps and the cycle finishes, let the dough rise for another 30 minutes, until it doubles in volume. Remove the dough and shape it into small balls. Place them on a greased baking tray and leave them to proof. Brush the tops of the buns with egg yolk or sweetened water. Bake at 180–200°C (356–392°F) for about 20 minutes, until golden brown. Once ready, you can dust the buns with powdered sugar or glaze them. Serve warm with tea or coffee.
