
Braided buns
Description
The baking is simple and quick. If you use dried olives, they are usually salty, so you can sharply reduce the amount of salt or omit it altogether. Black or green olives? Choose according to your taste. You can also add chili pepper to the dough if you like it spicy! The buns are tasty, soft, and disappear from the table instantly! Try them. Serve them cooled or slightly warm.

1. Prepare the ingredients. Let’s get started!

2. Mix the two types of flour with sugar, salt, and mint. If the yeast is fast‑acting dry, add it directly to the flour. I have fresh yeast; it needs to be dissolved in warm water and left for 5 minutes.

3. Add the vegetable oil (olive) and rub it with your hands until a fine crumb forms.

4. Pour the warm water with the yeast and knead a soft, pliable dough. Cover it with a clean, dry napkin and place it in a warm spot for 1–1.5 hours to rise.

5. Finely chop the olives.

6. Peel the large onion, cut it into cubes, and sauté in vegetable oil until soft.

7. The dough has risen, knead it with your hands. No more flour is needed.

8. Divide the dough into three parts, place the fried onion into the first one, and mix with a mixer or by hand, whichever is convenient. Combine the other two parts and fold in the chopped olives. To make it easier for them to “enter” the dough, dust the olives with flour—a teaspoon will be enough.

9. You can choose the size and thickness of the braids yourself, as you like. I did it like this: I divided the onion dough into 8 parts, and the olive dough into 16 parts. Now roll the strands, braid the plaits, with one onion strand and two with olives.

10. Place the braids on a parchment‑lined baking sheet and let them proof for about 30–40 minutes. Then bake in a preheated 180 °C oven for 20 minutes.

11. In the last couple of minutes I baked the buns on the “Convection” setting, which gave the buns such a beautiful appearance. You can brush them with egg before baking, or you can do nothing; the buns will still be beautiful and tasty!
