Instructions
- 1
Step 1

Prepare the ingredients according to the recipe list.
- 2
Step 2

Dissolve the yeast in warm milk, then add salt, sugar, and vanilla.
- 3
Step 3

Beat the egg into the milk mixture.
- 4
Step 4

Add the melted butter and mix.
- 5
Step 5

Add the flour. Mix the dough with a mixer or by hand, knead for about 5-7 minutes until the dough is smooth and does not stick to your hands.
- 6
Step 6

Cover the bowl with dough using plastic wrap. Leave at room temperature for 1.5–2 hours to ferment. During fermentation, perform one dough punch-down.
- 7
Step 7

While the dough is rising, prepare the poppy seed filling. Pour boiling water over the poppy seeds, cover with a lid, and let them soak for 30-40 minutes.
- 8
Step 8

Sift the poppy seeds through a fine sieve; if you don't have a fine sieve, you can strain them through cheesecloth or a loose fabric.
- 9
Step 9

Dry the poppy seeds on a paper towel or cloth to remove excess moisture.
- 10
Step 10

Prepare dried poppy seeds, 100 grams of sugar, 40 grams of soft (not melted) butter, and half an egg white.
- 11
Step 11

Using a blender, grind the poppy seeds with sugar.
- 12
Step 12

Mix soft butter and half of the egg white into the poppy seed filling.
- 13
Step 13

Divide the dough into two parts and roll into balls. Cover with plastic wrap to prevent drying out.
- 14
Step 14

Snail buns can be made in different ways. Method one: roll out the dough into a sheet about 0.5 cm thick.
- 15
Step 15

Place the poppy filling on half of the dough layer and smooth it out. Cut the other free half of the dough into strips about 1 cm wide, leaving 5-6 cm uncut at the edges.
- 16
Step 16

Roll the dough into a log, using the silicone mat to help.
- 17
Step 17

Seal the edge of the dough well.
- 18
Step 18

Place the dough into the pan, rolling it into a spiral. Let it rise for about 30 minutes.
- 19
Step 19

To prepare the buns using the second method, spread the poppy seed filling over the entire surface of the dough, leaving about 3-5 cm from the edges.
- 20
Step 20

Roll the dough into a roll, sealing the edge well.
- 21
Step 21

Using thread or a knife, cut into pieces.
- 22
Step 22

Place the buns in a greased baking pan. Let them rise for about 30 minutes.
- 23
Step 23

Brush the buns before baking with a mixture of egg yolk and a tablespoon of milk.
- 24
Step 24

Preheat the oven to 180°C (convection/bake setting) and bake for 25–30 minutes until done. Check doneness with a wooden skewer. To give the buns a glossy finish, brush them with sugar syrup made by boiling 1 tablespoon of water and 1 tablespoon of sugar for 2–4 minutes.
- 25
Step 25

No matter which method you use to prepare the buns, they will be incredibly appetizing and delicious.
- 26
Step 26

Ready. Serve at the table.
