
Bun with cutlet
Description
The recipe won't take much time. Below is a recipe for delicious, fragrant, and appetizing buns with meat patties. Yes, time will be needed to prepare such buns, but most of it will go to the dough's rise. I like to add vegetables, especially pumpkin, to the patty mixture. This makes the filling juicier and lighter. Try it. Serve cooled or slightly warm.

Start by preparing the dough. I do it in a bread machine, but you can knead it by hand as well. Heat the mixture of water and milk to 40 °C. Mix sifted flour with salt, sugar, and yeast. Pour in the milk mixture, add vegetable oil, and knead a soft dough. Let it rise until its volume triples.

In the minced meat – it's better to use a mixed blend – add grated onion and raw pumpkin, season with salt and pepper to taste. Knead the meat well and let it sit in the refrigerator for half an hour. Divide the chilled meat into small-sized balls. Place a piece of hard cheese on each and shape into round patties.

Knead the risen dough and divide it into balls roughly twice the size of the cutlets. Roll out or flatten each dough ball by hand into a flatbread, and place a cutlet in the center. Make three or four cuts along the edges of the dough.

Sequentially, starting a sector of dough on the cutlet, wrap all the dough around the filling, forming a rose‑shaped bun. Or shape the buns as you prefer. Let the buns rest, then brush them with an egg yolk beaten with milk and salt. Bake in a preheated 180 °C oven for half an hour, until a golden crust forms and the cutlets are cooked through.

Let the ready buns rest a bit under a napkin and serve them warm with a glass of tomato juice.
