
Bulgur with pumpkin
Description
The recipe won't take much time. It will be a great find for those on a diet or observing a fast. You can additionally add any vegetables to your taste—bell pepper, green beans, or carrots work perfectly! If you like spices, I highly recommend adding 1/4 teaspoon of turmeric at the end of cooking and mixing thoroughly! Serve hot.

Prepare all the necessary ingredients. Cook the bulgur according to the instructions on the package.

Peel the onion, pumpkin, and garlic, wash them, and cut into small cubes. Wash the tomatoes and cut them into wedges.

Heat vegetable oil in a frying pan. Fry the onion until translucent, then add the pumpkin and cook, stirring, for 2-3 minutes.

Add garlic and tomatoes last, sauté for about 1 minute. Season with salt to taste.

If the bulgur is already cooked by this time, add it to the skillet, gently mix everything, cover with a lid, and simmer over the lowest heat for 12–15 minutes, allowing the bulgur to absorb the vegetable juices. If necessary, season with salt and pepper to taste at the end of cooking.

Serve bulgur with pumpkin and fresh herbs.
